Fried Rice

4 cups cooled, cooked rice

3 eggs, beaten

2 Tbsp. oil

4 green onions, chopped

4 Tbsp. frozen peas

1 tsp. salt

¼ tsp. pepper

½ cup diced barbecue pork or cooked ham

1 Tbsp. soy sauce

4-6 Tbsp. oil

¼ or more tsp. curry powder


Heat wok or big pan to medium-high heat; swirl in 2 Tbsp. oil; pour beaten eggs and make scrambled eggs. Set aside. Maintain heat, swirl in 2 Tbsp. oil and add green onions, and peas; stir-fry for 1 minute. Sprinkle salt and pepper over mixture; add diced meat. Swirl in another 2-3 Tbsp. oil and add rice. Stir-fry for 4-5 minutes. Add soy sauce and mix well, using more oil, if needed. Add eggs back in and curry powder, if desired and stir well. Very tasty!!!
