Insanely Good Grilled Beef Teriyaki

Steak

2 lbs. sirloin steak tips or flank (cut in half with grain, then against grain into ½ inch pieces on the diagonal…don’t go thinner or the meat shrinks and falls through grates)

1/3 cup soy sauce

¼ cup mirin

2 Tbsp. vegetable oil

3 garlic cloves, minced

1 Tbsp. fresh ginger, minced or grated

1 Tbsp. sugar

1 tsp. grated orange zest

2 scallions, white parts minced and green part sliced thin on bias


Sauce

½ cup sugar

½ cup sake

½ cup mirin

1/3 cup soy sauce

1 tsp. ginger, grated or minced

1 tsp. cornstarch


Steak

Place sliced beef into gallon zip-loc with all ingredients (under Steak portion) except the green part of the scallions. Press out the air and toss to combine. Refrigerate for 30 minutes or up to an hour, flipping the bag about every 15 minutes to get even marinating.


Prepare either a charcoal or gas grill. Get the grates hot and use a half heated grill for either the charcoal or gas. (Burners on high on one side and on low for the other)


Sauce

While the grill is heating, whisk the sauce ingredients together in a small saucepan until combined. Bring the sauce to a boil over medium-high heat, stirring occasionally. Reduce the heat to medium-low and simmer, stirring occasionally, until the sauce is syrupy and reduced to 1 cup, 12-15 minutes. Transfer ¾ cup of the sauce to a bowl with spout (I use a small creamer pitcher).


Clean and oil the grates (oiling pays off!). Remove meat from marinade and pat with paper towel. Place meat on hot part of grill and sear until dark brown on the first side, 3-4 minutes. Repeat for the second side. Brush the meat with 2 Tbsp. of the sauce, flip and cook 30 seconds. Repeat for the other side. Transfer the meat to a serving platter and let rest for 5 minutes. Place steamed sticky rice in a rice bowl, place meat strips on top, drizzle the sauce over and sprinkle with the green parts of the scallions. This reminds me a little of the Korean beef we had in Japan…not sure what the Japanese thought they knew about Korean beef…but it was yummy!
