Mysterious Enchiladas Rancheros

This dish is mysterious because I don’t know the origin of the recipe, I just know that I used to make it. I assume that it’s pretty good.


8-12 flour tortillas

2 cups shredded Monterey Jack cheese

¾ cups chopped onion

¼ cup butter

2 cups chicken broth

¼ cup flour

1 cup sour cream

1 cup (4oz) can chopped green chili peppers


Place 2 Tbsp. cheese and 1 Tbsp. onion in each tortilla; roll. In saucepan, melt butter. Blend in flour. Add chicken broth, stirring constantly until mixture thickens and bubbles, stir in sour cream and green peppers. Cook till heated through. Do not boil. Pour over tortillas and bake at 425° for 30 minutes. Sprinkle remaining cheese on top. Return to oven for 5 minutes until cheese melts. Serves 4-6
